Well Shirataki noodles are available in most health foods or convenience stores found in areas with a heavy Asian or Chinese population (Asian markets). Alternatively if going shopping sounds like too much work, there are numerous online or Internet suppliers, who will be happy to ship your order to your front door for you.

Some caution though: beware of imitations. Although shiratake noodles are inexpensive there are various imitations on the marker. Tofu Shirataki Noodles are shipped in branded packets and are packaged wet. This means the packets are sealed containing some of the fluid used to cook the noodles when produced.

This fluid helps to preserve the noodles without the added need for preservatives and additives. This is done because both Shirataki and tofu is best preserved when suspended in a fluid. Shirataki noodles can be stored at room temperature for up to a year after there manufacture, so check the production and best before dates.

Low carb or zero carb noodles are shipped either dry or is packaged in the production fluid. However the dry noodles on the market are easier to imitate or replace with rice noodles. Check your purchase.

Pure Shirataki noodles should be almost transparent when cooked hence the name white fountain (shirataki), the tofu variety is more solid in appearance and may even colour the noodle to a light brown. Depending on the type of tofu used in the production of these noodles.

Although the tofu noodles have a higher carb count than those without, one cannot overlook the difference in texture. And with a natural carbohydrate count (not added sugar) of only 3g per 8 ounces is that really so high?
