Here is a quick and filling chicken noodle soup recipe suitable for vegans Chicken Noodle Soup

2 to 3 Tbsp. Coconut or Canola oil
2 carrots, peeled and finely sliced
1 medium onion, finely chopped
2 stalks celery, diced
6 cups of faux-chicken stock
Sal and pepper to taste
1 pound of faux chicken shredded or chunked
1 packet of Shirataki Tofu angel hair noodles
2 tbsp of freshly chopped parsley
Place the oil in a large pot and heat,
Add chopped onions and fry until cooked
Add the chicken stock slowly
allow to simmer adding the carrots and celery
Add the faux chicken
Allow to simmer for 10 minutes
Open and rinse the Shirataki noodles, chop noodles
Add noodles to soup and simmer for another 5 minutes
Add the parsley just before serving
Serve hot
