Paella


Ingredients:

4 table spoons coconut oil,
4 fresh tomatoes peeled and chopped,
1 tsp paprika,
1 packet Shirataki angle hair noodles,
4 ounces prawns or shrimps,
4 ounces farm fresh beans chopped,
I cup water,
Salt,
Pinch of Saffron or Turmeric.

Method
Place oil in a deep frying pan, skillet or wok,
Fry tomatoes in oil with paprika,
Add chopped beans,
Open and rinse Shirataki noodles,
Add the cup of water to the skillet with the shrimps,
Add salt to taste,
Add the noodles and once they have heated,
Dish up and serve with a pinch of saffron.

Serve immediately with a fresh green salad

For a spicier dish add some fresh chillies or bell peppers
The prawns could be substituted with chicken strips, which would need to be cooked prior to adding. (For those sensitive to shellfish)

Shirataki Spaghetti with Mushrooms

Ingredients
1 packet Shiitake spaghetti noodles
1 onion chopped
1 ounce corn flour
1 coconut oil
1 cup chicken stock
1 small tin tomato puree
1 tsp mixed herbs
4 ounces cooked ham
4 ounces fresh mushrooms
Salt and pepper

Method
Add coconut oil to frying pan and fry onion.
Slowly add the stock and stir continuously. 
Mix corn flour with a little water and add.
Keep stirring until a smooth sauce is achieved.
Now add the tomato puree and mixed herbs.
Cut the ham into blocks and add to the sauce.
Slice the mushrooms and add to the sauce.
Add salt and pepper to taste.
Open and rinse the Shirataki spaghetti and add to the sauce.
Allow simmering for 5-10 minutes until the spaghetti is heated.

Serve hot with a green salad in the side
